Carrot has an extremely low amount of calories; 100 g of carrots contain only 40 kcal, but it is rich with vitamins, minerals and phytonutrients.
Carrot is an excellent vitamin K source and a very good source of vitamin C and potassium. Besides that, it is one of the best sources of the alpha-carotene and beta-carotene cartenoids to which it owes its orange color. Cartenoids are strong antioxidants which prevent heart diseases and various degenerative diseases. In the human organism, they can transform into an active vitamin A form, which is important in terms of sight. Carrot is also a rich source of vitamin B1 and B6, niacin, manganese, magnesium, molybdenum and calcium. Like many other vegetables, carrots are rich with dietary fibers.
Cauliflower has an extremely low amount of calories; only 25 kcal in 100 g, but it is rich with vitamin C, folic acid and vitamin B6. Apart from the vitamins, cauliflower also contains numerous minerals, especially manganese, potassium and magnesium.
Like many other vegetables, cauliflower is rich with dietary fibers. Dietary fibers have an important role in regular digestion what causes the toxic substances to remain in the organism for a shorter period of time, therefore reducing the risk of numerous diseases. Since it belongs to the cabbage family, cauliflower is rich with phytochemicals that contain sulphor – glucosinolate and tiocianate (such as sulphoraphan and isotiocianate). These substances increase the liver’s capability to neutralize toxic substances and they prevent the occurrence of various types of cancer. Cauliflower contains certain enzymes as well and they also contribute to its detoxication potential.
Tomato is an excellent source of vitamins C, A and K and it also contains all B vitamins (except for the B12 vitamin). It is rich with potassium, magnesium, iron and copper. Although the green tomato doesn’t contain red plant pigment lycopene, scientific research has shown that regular consumption of green tomatoes also reduces the risk of heart and blood system diseases.
