Basic aivar ingredients are peppers, eggplants, garlic, oil and vinegar. The ingredients are baked, grinded and cooked together and the result is a tasty and aromatic vegetable side dish, deeply rooted into our food culture. Since numerous pigments, plant chemicals and vitamins are fat solvable, aivar is an excellent medium which ensures well exploitation of those substances.
Aivar goes particularly well with various steaks and barbecued meat but it is also a worthy addition to various vegetarian specialties.
